Mosella Restaurant Launches New Menu, Saturday Bottomless Brunch and Happy Hour

Mosella, synonymous with modern Mediterranean cuisine, enters an exhilarating new phase with its debut menu refresh. Since its inception in June 2023, this iconic restaurant has enchanted diners, beckoning them to its lush enclave nestled within the Forest Terrace of Pan Pacific Orchard. Here, every dish is artfully crafted from the freshest seasonal ingredients, brimming with vibrant flavours and culinary finesse.

 

A Menu of New Discoveries

While countries associated with the Mediterranean lifestyle popularly include Spain, Greece, Italy and Morocco, geographically there are 22 countries that border the Mediterranean Sea, and a modern cooking movement that sees new ingredients and influences colliding with the traditional. It is at this crossroads of exchanges that Mosella meticulously crafts its dishes, each showcasing a profound respect for the freshness, seasonality and origins of the ingredients used, with a focus on sustainably sourced produce such as the codfish and prawns used in its signature dishes.

Under the direction of Executive Chef Pedro Samper and his team, Mosella continues to craft elevated dining experiences centred around shared meals and the freshest ingredients.  New dishes include Hokkaido Scallop Carpaccio, marinated in zesty citrus dressing; Artichoke, served atop parsnip puree with Spanish Iberico ham, Manchego cheese, and a rich cured egg yolk; and the Porterhouse, inspired by Basque grilling traditions, promising a communal dining delight. Desserts at Mosella, led by Pastry Chef Eunice Low, are spectacular, with creations like the flambeed Cacao dessert and the innovative Mangosteen entremet providing a remarkable finish to the dining experience.

 

Mosella Saturday Brunch

True to Mosella’s ethos, the brand new Mosella Saturday Brunch invites guests to immerse in the joy of shared experiences with a selection of freshly prepared signature appetisers served tableside. Highlights include the Amelie Fine de Claire Oysters N3 adorned with bloody Mary foam and wafu sauce, 48-month Aged Iberico Ham served atop Spanish crystal bread and tomatoes, as well as the beloved Hamachi Tiradito, a dish of Japanese yellowtail, lightly flavoured with mandarin ponzu, truffle and garlic chips. Mosella’s open kitchen concept provides guests with an elevated brunch experience, with dedicated stations thoughtfully arrayed for limitless enjoyment. Start with a dazzling selection of vibrant salads, antipasti, and irresistible treats like Foie Gras Terrine, Pâté de Campagne, Truffle Mortadella and Beef Bresaola.

A line up of expertly crafted mains include signatures like the Gamba Roja al “Ajillo”, a flavourful dish of Mediterranean red prawn with garlic, chili, and smoked paprika, the Cochinillo, a crisp-skinned Spanish suckling pig accompanied by roasted apple purée, along with the delectable Baked Sea Branzino served with fennel and tarragon butter sauce. Freshly fired from the Josper grill and oven, enjoy the stunning Herb-Marinated Australian Wagyu Tomahawk, Charcoal Grilled New Zealand Lamb Rack and Salmon Wellington, each promising a culinary treat. Not to be missed are the selection of toothsome fresh pasta, Pan Seared Foie Gras, and the Tuscan-Style Saffron Risoni with Boston lobster in Cacciucco Livornese sauce, and tossed in a 24-month Grano Padano wheel, all prepared to order. A perennial brunch favourite, the Egg Benedict is topped with grilled Atlantic lobster for the ultimate indulgence.

Complementing the main courses, guests are invited to indulge in an assortment of exquisite desserts, patisserie creations, fantastical chocolates, and artisan cheeses. This culinary experience is elevated by the soothing harmonies of live jazz music, setting the stage for a brunch like no other, amidst the expansive, nature-filled surroundings of the hotel—an “orchard in the city” experience.

The Mosella Saturday Brunch, available every Saturday from 12pm–3pm, is priced at $108++ per adult and $54++ per child aged 8 to 12 years old, inclusive of soft drinks, coffee and tea. Wine lovers may add on a free-flow Champagne package at $98++ per person featuring Aubert & Fils Champagne, Rosé Prosecco, red and white wines, as well as a brunch selection of cocktails including Bloody Mary, Passionfruit Martini and more.

 

Mosella Happy Hour

Mosella introduces a delightful new Happy Hour menu, available daily from 3pm to 6pm for food, and extended until 8pm for drinks. Guests can enjoy this offering either in the restaurant’s chic interior or on the sun-soaked outdoor terrace, perfectly capturing the lively atmosphere of the Mediterranean’s bustling plazas and relaxed social gathering spots.

The menu features an array of Mediterranean bites perfect for sharing. Highlights include Mediterranean Tomato Bruschetta with heirloom cherry tomatoes, pesto, and extra virgin olive oil; Baked Camembert with Fresh Rosemary; Manchego & Truffle Fries; and Sourdough Beef Pastrami and Cheese Sandwiches, starting at $12++. Complementing the food, a curated selection of spirits and beers are priced at $12++, while wines and cocktails, including Aperol Spritz and Passionfruit Martini, are available at $16++.
