Let’s start with Moutarde, the more serious of the two — but serious in the best, most relaxed way. Think modern Parisian bistro energy: warm lights, clinking glasses, the low hum of weekend chatter, and plates that land on your table with just the right mix of precision and ease.
Pairet calls it “elevating simplicity,” and that’s exactly what it feels like. Bold flavours, meticulous technique, but wrapped in a kind of French casualness that makes you want to stay for hours. Long lunches, midweek dinners that somehow stretch into late-night conversations, plates that feel nostalgic but fresh — it’s all very moi, je ne sais quoi.
And of course, the showpiece: a live carvery station. A full spectacle — whole wood-fired roasted cuts carved right in front of you. Rotating daily, so one day it’s Australian Prime Rib, another it’s New Zealand Lamb Leg, or maybe an XXL Turbot if you’re lucky. The meats sit in a glass-walled maturation room (yes, you can actually see your dinner ageing gracefully) before making their way to the massive wooden carving station. It’s dramatic, a little sexy, and exactly the kind of energy dining out needs more of.

Pairet partnered with celebrated French sommelier Xavier Thuizat (Best Sommelier of France 2022) to craft an accessible, joyful wine list. Think: discoveries rather than intimidation, gems without pretension, and a very fun wine-tap wall so you can order by the carafe.
Sundae Royale: A Sweet Little Fever Dream

Now to the second venue: Sundae Royale, Pairet’s playful, nostalgic ice-cream bar right next door. If Moutarde is where you linger, Sundae Royale is where you go to smile. This is soft-serve, but make it haute. Everything is made in-house — the mixes, the toppings, the Chantilly — all crafted with Pairet’s signature precision.
