The St. Regis Singapore Debuts New Restaurant Sophia – Modern Italian Dining

Sophia celebrates the timeless art of Italian hospitality through classic recipes, famed signatures, and convivial rituals at Singapore’s best address.

There’s something irresistible about a new restaurant opening inside The St. Regis Singapore — the address alone already promises a certain level of elegance — but its latest addition, Sophia, feels like a particularly chic arrival.

Positioned as a celebration of modern Italian dining, Sophia is the kind of place where you immediately feel enveloped by warmth: the charm of Italian hospitality, the gentle hum of a dining room filled with conversation, the unmistakable scent of butter, garlic, lemon and olive oil doing their magic in the kitchen. It’s polished without being performative; luxurious, but with heart.

And at the centre of it all is Chef de Cuisine Angelo Sergio, a Puglia native who knows Italian cuisine not from trends, but from roots. His menu pulls inspiration from eleven different regions across Italy — a tapestry of flavours, traditions and stories — and brings them together in a way that feels both contemporary and comfortingly familiar.

 

Where the Meal Begins: Simple Pleasures, Elevated Beautifully

Sophia’s menu is designed for sharing — very Italian, very convivial, very “grab a fork and steal a bite of whatever just landed on the table.” Expect homemade focaccia topped with cherry tomatoes still bursting with sweetness, beef bresaola with tangy goat cheese and honey, and stracciatella draped with smoked red tuna that somehow tastes even better than it sounds.

The antipasti are where Angelo’s craft really shines. The Polpo Grigliato comes smoky and tender, plated with fava beans and the sweet Tropea onions Italy is famous for. And then there’s the Carpaccio di Gamberi — translucent slices of Mazara red prawn paired with raspberry lemon gel and plankton oil. It’s delicate, bright, and genuinely beautiful.

 

The Pastas You’ll Be Thinking About Days Later

If you come to Sophia and skip the pasta, you’re doing it wrong. The star for me? The Tagliatelle Atavi e Porcini — hickory-smoked Atavi pasta imported exclusively for Sophia, folded with porcini and veal jus. It smells like a forest after rain; it tastes even better. The Pappardelle al Ragù is pure comfort: Wagyu brisket hand-cut into fine shreds, simmered into a rich, glossy ragù that clings to each ribbon of pasta. A hug in a bowl.

 

For the Mains: Big, Bold, and Utterly Italian

The Bistecca alla Fiorentina is a moment: a full one-kilogram Angus T-bone, grilled simply, seasoned with pepperberry sea salt, and served with red wine jus and cannellini beans. It’s rustic, primal, and exactly what a proper bistecca should be. If you prefer something gentler, the Baccalà in Umido — a refined cod stew with silky onion sauce, potato and artichoke — feels like a dish straight out of a quiet seaside town.

 

Desserts With a Sense of Theatre

Of course Sophia has Tiramisu — layered, boozy, perfect — and the southern Italian Baba Napoletano soaked in limoncello syrup. But the true showstopper is the Cannoncini alla Crema, prepared tableside from a charming dessert trolley. The Salame di Cioccolato also gets the same treatment. It’s nostalgic, elegant, and just a little bit decadent.

There’s also an a la carte menu, but if you’re visiting on a weekday, the set lunches at $42++ or $58++ are a lovely introduction.

 

Sundays at Sophia: Brunch, But Make It Italian Luxury

Sunday Brunch here is an experience — lively, stylish, and deliciously indulgent. Guests are welcomed with Mimosas and Aperol Spritzes, a live band sets the tone, and the space transforms into something that feels like a long Italian afternoon among friends.

There’s a mozzarella bar, pastas prepared à la minute, artisanal cheeses, pass-around tiramisu, and a roving gelato cart that makes its way around the room scooping out fresh gelato. For $198++, brunch includes bottomless R de Ruinart champagne — exactly the kind of Sunday ritual I can get behind.  I absolutely loved this bottomless brunch – the live band were incredible, the ambience is on point and every dish served at the buffet was a taste explosion. I cannot rate it enough – absolutely recommend everyone going to this brunch for a memorable Sunday!

 

For the Drinkers: Italy in a Glass

The cocktail menu features three signature creations — Amalfi Breeze, Bella Rossa and Negroni Bianco — all built around Malfy Gin, infused with botanicals from the Amalfi Coast. Light, bright, Mediterranean. The wine list is deep and thoughtful: 70 artisanal labels from across Italy, including nine organic selections. Franciacorta, Brunello, Etna — each bottle chosen with purpose and a sense of place. And yes: they have Grappa, Limoncello and Sambuca to finish, because a proper Italian meal deserves a proper Italian goodbye.
